Mitch is the latest in a long list of Londoners to make his mark on the Sydney bar scene as a Bar Manager, community builder and rum enthusiast extraordinaire.
He cut his teeth in the industry in one of the most famous rum bars in the world – Trailer Happiness – a mainstay of the Notting Hill and London bar scene before stints behind the bar at Rum Kitchen and Made In Shade.
A short stint in Los Angeles, behind the bar at the historic Coles whet Mitch’s appetite for a bit of sunshine.
This brought him to Sydney and led to him to his role as General Manager of the industry favourite Henrietta’s Supper Club in Darlinghurst.
As Henrietta’s only had a small bar team, there was no structured training program in place and Mitch’s efforts to go along to brand educationals hosted by other bars (the norm in London) was met by skepticism. In the absence of FDM, Mitch decided to start his own, inclusive training program.
This gave birth to the Sydney Academy of Bartenders – a training program for all bar staff in the city on not just brands but, importantly bar skills. Mitch took inspiration from the famous London Academy of Bartenders, which gave birth to LAB – a breeding ground to some of the finest bartenders in the world.
