Stepping out on your own is difficult, let alone in the bar industry.  But that’s exactly what bar entrepreneur, Christophe Lehoux did. After selling his shares in the group he co-founded, Pocket Group, Lehoux opened up shop in Surry Hills just a short time ago. Being able to combine his two passions, millinery and cocktails, Lehoux brings an idea to the industry that has yet to be explored.

Stepping into Soultrap you immediately notice the pleasant orange glow and hats adorning the bar and walls. Each hat is handcrafted by Lehoux himself at the back of the venue, and like his cocktails, incorporate stellar craftsmanship.

The Perfect Combination

Along with the comprehensive cocktail menu, Soultrap also offers a French Mediterranean influenced menu that encourages share plate dining. With a selection of cheeses, dips, cured meats and breads, one cannot go wrong with a graze and a cocktail.

Bars need to focus on going back to the basics and not putting themselves in a corner. You need to be able to cater to all types of drinkers!

The Australian Manhattan

The Australian Manhattan is our take on the classic Manhattan. This particular version utilises all Australian ingredients. The Manhattan is great because there are so many great variations to choose from!
