One of my favourite gin cocktails is the pre- prohibition classic the ”Clover Club” that dates back to 1910 and is named after the Philadelphia members club. This is my twist on the classic that features Opihr Gin lovingly combined with locally grown rhubarb, anise myrtle, jalapeños and lemons.A fusion of flavours connecting Opihr’s spices of the orient with regional Australia.

House made rhubarb and jalapeño tincture
20ml
Lemon juice
20ml
Aquafaba
Mist
House made anise myrtle tincture

How to

Step 1

Shake and strain into a pre- misted coupette with tincture
